Raw Vegan Valentines Day: Frosted Sugar Cookies And Chocolate Truffles

Valentine's Day is just around the corner and naturally that means a day of love, sweets, and chocolate. As a child I would help my mom make frosted sugar cookies in the shape of hearts for me to take to our schools Valentines party. These cookies are my attempt at a raw vegan version of those cookies. I think they're super tasty and I hope you enjoy them too!

These cookies are firm enough that they hold together really well, but they've got a lovely soft texture and the frosting holds its shape but is beautifully creamy. I've garnished the cookies with goji berries and dried pomegranate seeds but you can garnish them with whatever you like.
Sugar Cookies
  • 1/2 cup blanched almond flour

  • 1/4 cup coconut flour

  • 1/4 cup powdered xylitol, sifted

  • 3 tablespoons water

  • 1/4 cup melted coconut oil

Sift the coconut flour into a bowl. Add all remaining ingredients and stir together until evenly combined. Let the mixture sit for a few minutes until the dough thickens a bit. Use a mini ice cream scoop to make balls and release them onto a parchment paper lined tray. Flatten each ball with your hand. Set in the fridge or freezer to firm up while making the frosting.

Pink Frosting
  • 1/4 cup melted coconut butter

  • 2 tablespoons melted coconut oil

  • 2 tablespoons fine powdered xylitol

  • 1/4 cup cool water

  • 1/2 teaspoon pure vanilla extract

  • Beet powder, as needed for colour


Whisk all BUT THE WATER together until smooth. Add the water a little at a time as you keep whisking until the mixture thickens a little and if this takes some time, let the frosting sit for a few minutes and then whisk again. It needs to thicken slightly. When it thickens (when you spoon a dollop onto any surface, it should hold some shape and not be runny), spoon some frosting over each cookie. If it starts to harden up before you get all the cookies decorated, simply place the bowl into hot water and keep whisking. It will loosen up quickly. Garnish with freeze dried strawberries or goji berries. Chill in the fridge for at least 20 minutes for the frosting to firm up.

Now into chocolate land… I've added 2 new chocolate truffle flavours to my repertoire exclusively for my Valentines special and I'm sooo excited about these ones. They're insanely good!!!
